Egg Bhurji Sandwich

Ingredients:

  • Bread Slices 4
  • Veggies( carrots, capsicum, tomato, beans, few onion slices, cabbage or lettuce)
  • Cumin Seeds ¼ tsp
  • Grated Ginger ½ tsp
  • Red Chilli Powder (or as needed) 1/8 tsp
  • Chopped Green Chilli 1
  • Coriander or Mint Leaves (Few)
  • Pinch Of Garam Masala Or Pepper Powder
  • Salt To Taste
  • 1 tbsp oil
  • Lemon Juice (optional)

Method:

  • Trim the edges of bread if desired. Break the eggs to a bowl and check for shells.
  • Heat a tawa and toast the bread and put them a side when crusty.
  • Add oil to the same tawa, add cumin, grated ginger and green chillies.
  • Pour the eggs on tawa and scramble them gently. Flame should not be high.
  • Add salt, chilli powder, garam masala or pepper powder. Mix well.
  • When done transfer the egg bhurji to the bread slice and place onions or whatever veggies you prefer.
  • Place another slice of bread on the top to cover the filling.
  • Serve hot.
