Bajra Raab

Ingredients:

  • Chhaach (buttermilk) – 2 cups
  • Bajre ka aata (pearl millet flour) – 2 tbsp
  • Salt – to taste
  • Ghee – 1 tbsp
  • Cumin seeds – 1 tbsp
  • Green chillies – 1-2, finely chopped
  • Curry leaves – a few
  • Crushed ginger – 1/2 tbsp
  • Fresh coriander leaves – for garnish
  • Cumin powder – a pinch

Methods:

  • In a bowl, mix bajre ka aata, chhaach, and salt until the mixture is smooth and free of lumps.
  • Pour the mixture into a pan and cook on medium heat, stirring continuously, until it thickens to your desired consistency.
  • Heat ghee in a small pan, then add cumin seeds, green chillies, crushed ginger, and curry leaves. Let them crackle and release their aroma.
  • Add this flavorful tadka to the raab and stir well.
  • Serve hot and garnish with a pinch of cumin powder and a fresh coriander leaf.
