Beetroot Soup

Ingredients:

  • 2 Tomatoes
  • 1 Carrot
  • 1 Beetroot
  • 1 Onion
  • 3-4 Garlic Cloves
  • 1 inch Ginger
  • 1 to 1½ tsp Ghee
  • 1/4 tbsp Red Chili Powder
  • 1 tbsp Black Pepper Powder
  • Salt to taste
  • 3 cups Water
  • A little milk

Methods:

  • Heat 1 to 1½ tsp ghee in a pan. Add 1/4 tsp red chili powder and sauté for a few seconds on low flame.
  • Add chopped vegetables (tomatoes, carrot, beetroot, onion, garlic, and ginger) and stir for 2-3 minutes to enhance the flavors.
  • Pour in 3 cups of water, cover, and let it simmer for 15-20 minutes until the vegetables are soft.
  • Let the mixture cool slightly, then blend it into a smooth puree.
  • Strain the soup, return it to the pan, and season with salt and black pepper powder.
  • Simmer for another 5 minutes, add a little milk for creamy texture and enjoy it hot!
