Cauliflower Fried Rice with Tofu

Ingredients:

  • Green cabbage – 2 cup(s) (170g)
  • Carrot(s) – 1 medium, finely chopped
  • Fresh ginger – 2 tbsp.
  • Garlic – 3 clove(s), crushed
  • Snow peas – 250 g, sliced on the diagonal
  • Green shallot(s) – 4 individual
  • Cauliflower – 480 g, rice
  • Rice wine vinegar – 3 tbsp

Method:

  • Lightly spray a large non-stick frying pan with oil. Heat pan over medium-high heat. Add cabbage, carrots, ginger and garlic and stir-fry for 2 minutes.
  • Add snow peas, shallots and cauliflower ‘rice’. Stir-fry for 3-5 minutes or until tender crisp. Remove from heat and stir in vinegar.
