Ingredients:
- 2 medium hard-boiled eggs, peeled
- 1/4 cup Greek yogurt
- 1/3 small onion, finely chopped
- 1/3 cup fresh coriander leaves, chopped
- Black pepper, onion powder, and garlic salt, to taste
- 2 cucumbers, sliced in half lengthwise, seeds removed
Method:
- On a cutting board, chop the hard-boiled eggs, onion, and coriander leaves together until finely chopped and well-mixed.
- Add Greek yogurt and mix until smooth.
- Season with black pepper, onion powder, and garlic salt to taste.
- Fill each cucumber half with the egg mixture, making little “boats.”
- Serve immediately, and enjoy!.
