Mushroom Soup

Ingredients:

  • 2 medium onions
  • 400g mushrooms
  • 5-6 cloves garlic
  • 50g paneer or feta cheese
  • Salt & pepper to taste
  • Chopped coriander (for garnish)
  • 1-2 tbsp olive oil
  • Water (for desired consistency)

Method:

  • Step 1: Caramelize the thinly sliced onions in olive oil until golden and soft.
  • Step 2: Add mushrooms and garlic, sauté until they brown.
  • Step 3: Blend the caramelized onions, mushrooms, garlic, and paneer into a smooth purée.
  • Step 4: In the same pan, sauté sliced mushrooms in olive oil until golden and crispy.
  • Step 5: Add the purée to the crispy mushrooms with water to adjust the consistency. Season with salt and pepper.
  • Step 6: Boil for 2 minutes, then garnish with coriander leaves.
  • Step 7: Serve hot and enjoy!
