Ingredients:
- 2 medium onions
- 400g mushrooms
- 5-6 cloves garlic
- 50g paneer or feta cheese
- Salt & pepper to taste
- Chopped coriander (for garnish)
- 1-2 tbsp olive oil
- Water (for desired consistency)
Method:
- Step 1: Caramelize the thinly sliced onions in olive oil until golden and soft.
- Step 2: Add mushrooms and garlic, sauté until they brown.
- Step 3: Blend the caramelized onions, mushrooms, garlic, and paneer into a smooth purée.
- Step 4: In the same pan, sauté sliced mushrooms in olive oil until golden and crispy.
- Step 5: Add the purée to the crispy mushrooms with water to adjust the consistency. Season with salt and pepper.
- Step 6: Boil for 2 minutes, then garnish with coriander leaves.
- Step 7: Serve hot and enjoy!
