Noodle Soup

Ingredients:

  • 1 pack millet noodles
  • 1 tbsp olive oil
  • 1 tbsp garlic (minced)
  • 1 tsp ginger (grated)
  • 1 small onion (chopped)
  • 1 medium carrot (julienned)
  • 1/2 cup beans (chopped)
  • 1/2 cup mushrooms (sliced)
  • 2 cups vegetable stock or water
  • 1 tbsp soya sauce
  • 1 tbsp vinegar
  • Salt and black pepper to taste
  • 2 tbsp spring onions (chopped)
  • Stems of coriander
  • 2 tbsp fresh coriander leaves (chopped)

Method:

  • Heat olive oil in a pan. Add garlic, ginger, and onion; sauté until translucent.
  • Add carrot, beans, and mushrooms. Cook for 3-4 minutes.
  • Pour vegetable stock or water into the pan. Add soya sauce and vinegar. Bring it to a boil, and season with salt and black pepper.
  • Add coriander stems and millet noodles. Simmer until the noodles are cooked.
  • Garnish with spring onions and fresh coriander leaves. Serve hot and enjoy!
