Ingredients:
- 1 pack millet noodles
- 1 tbsp olive oil
- 1 tbsp garlic (minced)
- 1 tsp ginger (grated)
- 1 small onion (chopped)
- 1 medium carrot (julienned)
- 1/2 cup beans (chopped)
- 1/2 cup mushrooms (sliced)
- 2 cups vegetable stock or water
- 1 tbsp soya sauce
- 1 tbsp vinegar
- Salt and black pepper to taste
- 2 tbsp spring onions (chopped)
- Stems of coriander
- 2 tbsp fresh coriander leaves (chopped)
Method:
- Heat olive oil in a pan. Add garlic, ginger, and onion; sauté until translucent.
- Add carrot, beans, and mushrooms. Cook for 3-4 minutes.
- Pour vegetable stock or water into the pan. Add soya sauce and vinegar. Bring it to a boil, and season with salt and black pepper.
- Add coriander stems and millet noodles. Simmer until the noodles are cooked.
- Garnish with spring onions and fresh coriander leaves. Serve hot and enjoy!
