Ingredients:
- Saute Paneer slices: 2-3 (1 inch thick)
- with Olive oil: 1 tsp for grilling
For the Vegetables
- Corn 1/2 cup
- Bell peppers 1/2 cup
- Onions 1/4 cup
- Garlic 1 tbsp
- Salt to taste
- Pepper pinch
- Olive oil 2 tsp
- Green chillies 1 (as per your taste)
Toss everything, in a pan for a few minutes
For the Green Sauce
- Milk 3/4 cup
- Spinach purée 1/4 cup
- Ghee 1 tbsp
- Wheat flour 1 tosp
- Salt to taste
- Pepper pinch
- Chilli flakes 1 tsp
Method:
- Saute garlic in olive oil, add corn, bell peppers, onions, green chilies, salt, and pepper; toss for 3-4 mins and set aside.
- In another pan, melt ghee, add wheat flour, and stir for 1-2 mins.
- Slowly pour in milk, add spinach purée, salt, pepper, and chili flakes; simmer until thick.
- (Optional) Season paneer with salt and pepper, then grill in oil/ghee until golden on each side.
- Serve grilled paneer topped with sautéed veggies and drizzle with green sauce.
