Paneer Thecha

Ingredients:

  • 3-4 Green Chillies (adjust as per spice tolerance)
  • 6-7 Garlic Cloves
  • 1/4 cup Peanuts
  • Coarse Salt (to taste)
  • Lots of Coriander & Coriander Stems
  • Juice of 1/2 Lime
  • Paneer – 200 g
  • A little Oil

Methods:

  • Roast the Ingredients: In a pan, dry roast the peanuts, garlic cloves, and green chillies until lightly golden and aromatic.
  • Crush the Mix: Transfer the roasted ingredients to a deep marble pot (mortar and pestle). Add coriander, coriander stems, lime juice, and coarse salt. Crush everything into a coarse paste.
  • Coat the Paneer: Cut the paneer into cubes and coat it thoroughly with the prepared paste.
  • Cook the Paneer: Heat minimal oil in a tawa (pan) and roast the coated paneer cubes on medium flame until lightly golden on all sides.
