Ingredients:
- 1/2 cup Matar (green peas), boiled and mashed
- 1 cup Sooji (semolina)
- 1 cup Yogurt
- Green chillies and ginger, finely chopped (adjust to taste)
- 2 tbsp Coriander, finely chopped
- 1 tbsp Salt (adjust to taste)
- 2 tbsp Eno fruit salt
- 1 tbsp Oil, for greasing
Method:
- In a mixing bowl, combine the mashed Matar, Sooji, yogurt, chopped green chillies, ginger, coriander, and salt. Mix well to form a thick batter. Let it rest for 10-15 minutes.
- Meanwhile, prepare the idli steamer by greasing the idli moulds with oil.
- After resting, check the batter consistency. If it has thickened too much, you can add a little water to adjust the consistency.
- Just before steaming, add Eno fruit salt to the batter and mix gently. You’ll notice the batter becoming frothy.
- Pour the batter into the greased idli moulds, filling them about 3/4th full.
- Steam the idlis in the steamer for about 10-12 minutes or until a toothpick inserted into the center comes out clean.
- Once done, remove the idli moulds from the steamer and let them cool for a couple of minutes.
- Carefully remove the idlis from the moulds using a spoon.
