Ingredients:
- 2 slices oats + wheat bread
- 1 small beetroot (grated)
- 2 tbsp hung curd
- 1 tbsp grated cucumber
- 1 tbsp grated onion
- 1 chopped green chili (optional)
- Fresh coriander
- Salt, red chili powder, cumin powder, black pepper – to taste 1 tsp oil
- Mustard seeds + curry leaves for tempering
Methods:
- Mix beetroot, cucumber, onion, hung curd, green chili, coriander, and spices.
- In a pan, heat oil. Add mustard seeds + curry leaves.
- Spread the mixture on one bread slice, top with another.
- Toast both sides till golden and crisp.
- Enjoy warm – this sandwich is full of protein, fiber, antioxidants, and iron.
