Ingredients:
- 1/2 cup moong dal (split green gram)
- 1/2 cup rice
- 1/4 cup poha (flattened rice)
- 1 carrot (grated)
- 1 onion (finely chopped)
- 2-3 green chillies (finely chopped)
- Handful of coriander leaves (finely chopped)
- Salt to taste
- Oil for cooking
Method:
- Rinse 1/2 cup moong dal and 1/2 cup rice thoroughly. Soak them in water for at least 4-6 hours or overnight
- Rinse and soak 1/4 cup poha in water for 15-20 minutes before grinding
- Drain the soaked moong dal and rice. Transfer them to a blender along with the soaked poha
- Grind the mixture into a smooth batter, adding a little water as needed to achieve a thick, pourable consistency
- Transfer the batter to a mixing bowl. Add the grated carrot, finely chopped onion, green chillies, and coriander leaves. Mix well
- Add salt to taste and mix again to ensure all ingredients are well combined
- Heat an appe pan (paniyaram pan) and add a few drops of oil into each cavity
- Once the pan is hot, pour a spoonful of batter into each cavity, filling it up to 3/4 full
- Cover the pan with a lid and cook on medium heat for about 3-4 minutes or until the bottoms are golden brown and the edges start to set
- Using a skewer or spoon, gently flip each appe to cook the other side. Add a few more drops of oil if needed
- Cook for another 3-4 minutes until the other side is also golden brown and the appe are cooked through
- Once done, remove the appe from the pan and place them on a serving plate
- Serve hot with your favorite chutney or sauce
