Quinoa Salad (Gluten Free)

Ingredients:

  • 1 Cups Quinoa.
  • 1 Tablespoon Olive Oil.
  • 1 teaspoon Lemon Juice.
  • Salt and Ground Black Pepper To Taste.
  • 1small Carrot, Chopped.
  • 1/2 Cucumbers, Chopped.
  • 1 Green Onions, Chopped.
  • 1/2 Bell Pepper, Chopped.

Method:

  • Bring the quinoa and 3 cups water to a boil in a large pot. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, 15 to 20 minutes. Run under cold water to cool; drain. Pour into a large bowl.
  • Whisk the olive oil, lemon juice together in a bowl until well incorporated. Season with salt and black pepper. Pour the dressing over the quinoa and stir to coat evenly. Add the carrot, cucumber, green onions, and bell pepper; stir until evenly mixed. Serve immediately.
