Ingredients:
- 1 cup cooked rice
- 2 cups water
- ½ cup curd (yogurt)
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped
For Tadka:
- 1 tablespoon ghee
- ½ teaspoon mustard seeds
- ½ teaspoon cumin seeds (jeera)
- A few curry leaves
- Salt to taste
Method:
- Take cooked rice and soak it overnight in 2 cups of water in a mud pot.
- The next morning, add curd and finely chopped onions with green chilies to the soaked rice in the mud pot.
- Prepare a tadka by heating ghee in a pan. Add mustard seeds, cumin seeds, and curry leaves. Let them sizzle.
- Pour the tadka over the rice-curd mixture in the mud pot and mix well.
- Your delicious and probiotic-rich rice kanji is ready to enjoy!
