Rice kanji

Ingredients:

  • 1 cup cooked rice
  • 2 cups water
  • ½ cup curd (yogurt)
  • 1 small onion, finely chopped
  • 1-2 green chilies, finely chopped
For Tadka:
  • 1 tablespoon ghee
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds (jeera)
  • A few curry leaves
  • Salt to taste

Method:

  • Take cooked rice and soak it overnight in 2 cups of water in a mud pot.
  • The next morning, add curd and finely chopped onions with green chilies to the soaked rice in the mud pot.
  • Prepare a tadka by heating ghee in a pan. Add mustard seeds, cumin seeds, and curry leaves. Let them sizzle.
  • Pour the tadka over the rice-curd mixture in the mud pot and mix well.
  • Your delicious and probiotic-rich rice kanji is ready to enjoy!
