RO-TI NACHOS
Made with leftover rotis & a whole lot of healthy goodness!
Ingredients:
- 4–6 leftover rotis
- Peri peri masala
- Salt to taste
- A little oil
Methods:
- Cut leftover rotis into triangle shapes (just like nachos!).
- Toss them in a bowl with a drizzle of oil, peri peri masala & salt.
- Air fry them at 160°C for 5–6 mins until crispy & golden. (Yes, that’s your healthy nacho base done!
Now for the Toppings:
- Boiled rajma (kidney beans)
- Chopped bell peppers
- Sweet corn
- Olives, Jalapeños
- A sprinkle of cheese
- Chilli flakes
- Oregano
