Ingredients:
- 500g desi tomatoes
- 500g hybrid tomatoes
- 2 tbsp butter
- 1 onion (chopped)
- 1 big carrot (chopped)
- 1 potato (chopped)
- 1 beetroot (chopped)
- 1-inch ginger (grated)
- 3 garlic cloves (chopped)
- Coriander stems (a handful)
- Salt to taste
- 1 tbsp lemon juice
- 1 tbsp sugar
- ½ tbsp black pepper powder
Methods:
- Heat butter in a pan, sauté onions, garlic, and ginger until aromatic.
- Add carrots, potato, beetroot, and coriander stems. Cook for 5 minutes.
- Add tomatoes, salt, sugar, and pepper. Cover and cook until soft.
- Blend the mixture into a smooth puree, strain, and mix in lemon juice.
- Cool the mixture, pour into ice cube trays, and freeze.
