Tomato Soup Cubes

Ingredients:

  • 500g desi tomatoes
  • 500g hybrid tomatoes
  • 2 tbsp butter
  • 1 onion (chopped)
  • 1 big carrot (chopped)
  • 1 potato (chopped)
  • 1 beetroot (chopped)
  • 1-inch ginger (grated)
  • 3 garlic cloves (chopped)
  • Coriander stems (a handful)
  • Salt to taste
  • 1 tbsp lemon juice
  • 1 tbsp sugar
  • ½ tbsp black pepper powder

Methods:

  • Heat butter in a pan, sauté onions, garlic, and ginger until aromatic.
  • Add carrots, potato, beetroot, and coriander stems. Cook for 5 minutes.
  • Add tomatoes, salt, sugar, and pepper. Cover and cook until soft.
  • Blend the mixture into a smooth puree, strain, and mix in lemon juice.
  • Cool the mixture, pour into ice cube trays, and freeze.
When frozen, pop the cube into a bowl and pour hot water. Stir well and enjoy the soup
