Ingredients:
- 1 cup chana dal (split chickpeas)
- 1-2 cloves garlic
- 1-2 green chilies
- 1-inch piece of ginger
- 1 cup spinach, chopped
- 1/2 cup onion, chopped
- 1/2 cup coriander leaves, chopped
- 1 fistful curry leaves, chopped
- 1 tbsp cumin seeds
- 1 tbsp fennel seeds
- 1 tbsp salt (or to taste)
Method:
- The chana dal thoroughly and soak it in water for at least 2-3 hours. Drain the water after soaking.
- In a blender, add the soaked chana dal, garlic cloves, green chilies, and ginger. Grind the mixture into a coarse paste, using a little water if needed.
- Transfer the chana dal paste to a mixing bowl. Add chopped spinach, onion, coriander leaves, curry leaves, cumin seeds, fennel seeds, and salt. Mix everything well to form a thick batter.
- Preheat your waffle iron.
- Lightly grease the waffle iron with oil. Pour a portion of the batter into the waffle iron, spreading it evenly. Close the lid and cook for 4-6 minutes or until the waffles are golden brown and crispy.
- Remove the waffles from the iron and serve them hot with chutney or yogurt dip of your choice.
