Pink Beetroot Sandwich

Ingredients:

  • 2 slices oats + wheat bread
  • 1 small beetroot (grated)
  • 2 tbsp hung curd
  • 1 tbsp grated cucumber
  • 1 tbsp grated onion
  • 1 chopped green chili (optional)
  • Fresh coriander
  • Salt, red chili powder, cumin powder, black pepper – to taste 1 tsp oil
  • Mustard seeds + curry leaves for tempering

Methods:

  • Mix beetroot, cucumber, onion, hung curd, green chili, coriander, and spices.
  • In a pan, heat oil. Add mustard seeds + curry leaves.
  • Spread the mixture on one bread slice, top with another.
  • Toast both sides till golden and crisp.
  • Enjoy warm – this sandwich is full of protein, fiber, antioxidants, and iron.
