Ingredients:
- 2-3 eggs
- A pinch of salt
- 3-4 cloves garlic, minced
- Handful of chopped spring onions
- 1-1.5 cups leftover rice
- 1-1.5 tsp soy sauce (dark/light/mixed)
- ½ tbsp vinegar
- Chilli oil (as per taste – for cooking & topping)
- Chopped red chillies (optional, for garnish)
👩🍳 Method:
1. Crack the eggs in a bowl, add salt & whisk until frothy.
2. Heat a splash of chilli oil in a pan (DM me if you want my chilli oil recipe 🔥)
3. Sauté minced garlic till fragrant.
4. Pour in the whisked eggs. Once softly scrambled, stir in spring onions.
5. Add rice, soy sauce, vinegar & an optional splash of chilli oil.
6. Stir-fry till everything’s heated through and flavours combine well.
7. Garnish with more spring onions & chopped red chillies or chilli oil on top.
8. Serve hot & enjoy your quick comfort bowl!
