Shahi lauki
Lauki Rings
- 1 medium lauki, salt
Stuffing
- 150g paneer, 1 onion, 2-3 green chillies, 1 tbsp ghee, coriander, salt
Gravy
- 1 onion, 3 tomatoes, 4-5 dried chillies, 8-10 cashews, ½ tbsp ghee, salt, spices (coriander, chilli, haldi, kitchen king, garam masala), 50g paneer + 1 cup water
Garnish with coriander
Method
- Cut lauki into rings → boil 7-8 mins → scoop centres.
- Sauté onion + chillies in ghee, add paneer, salt, coriander.
- Stuff lauki rings, pan-seartill golden.
- Cook onion, tomato, chillies, cashews in ghee + spices.
- Blend with paneer + water.
- Pour gravy, place stuffed lauki, garnish & serve.
