Broccoli soup
Ingredients:
- 1 tsp olive oil
- 2½–3 cups broccoli florets (or 1 medium broccoli)
- 14–16 soaked almonds
- 1 small onion, chopped
- 4–5 garlic cloves
- 2 cups water or vegetable stock (adjust as needed)
- ⅓ cup milk (optional, for extra thickness)
- Salt to taste
- Black pepper to taste
Method:
- Heat olive oil/Butter and lightly sauté onion & garlic.
- Add broccoli florets, soaked almonds, water or veg stock and seasonings.
- Simmer till broccoli is soft but still bright green.
- Blend into a smooth soup.
- Add milk (optional), salt & black pepper.
- Give one final boil.
Optional Topping (for crunch):
- Lightly sauté a few raw broccoli florets in a pan, season lightly and use as a crunchy topping before serving.
