Chilli Garlic Eggs

Ingredients:

  • 3 whole eggs
  • Salt (to taste)
  • Red pepper
  • White pepper
  • Black pepper
  • Oregano
  • Chili flakes
  • Butter (small amount)
  • Oats flour
  • Milk
  • Chopped garlic
  • Fresh coriander leaves

Method:

  1. Break 3 eggs → add salt, red pepper and black pepper → blend well with a blender till fluffy.
  2. Heat a little butter in a pan → pour the seasoned fluffy eggs → cook till golden brown → transfer to a bowl.
  3. In a separate pan, add butter + chopped garlic → sauté → add oats flour + milk → white pepper → black pepper, stir into a smooth sauce.
  4. Season sauce with oregano, chili flakes and coriander.
  5. Add the cooked eggs into the sauce → drizzle chili oil → garnish with coriander.

Chili Oil Recipe:

  1. Heat olive oil in a small tadka pan.
  2. Add paprika powder + chili flakes.
  3. Let it infuse → chili oil is ready!
