Energy Bars

Ingredients:

  • ⁠Instant oats – ½ cup (lightly roasted)
  • ⁠Cashews – ¼ cup
  • Almonds – ¼ cup
  • ⁠Walnuts – ¼ cup
  • Pistachios – 2 tbsp
  • ⁠Sunflower seeds – 2 tbsp
  • ⁠Pumpkin seeds – 2 tbsp
  • Melon seeds – 2 tbsp
  • Dates – 50 g (deseeded)
  • Figs – 4–5
  • Desiccated coconut – ¾ cup
  • ⁠Dark chocolate (optional) – melted for topping

 

Method:

  1. ⁠Roast oats & all nuts/seeds till fragrant.
  2. ⁠Blend roasted mix with dates, figs & coconut till sticky.
  3. ⁠Press into a mould, top with melted chocolate (optional).
  4. Set in fridge 10–15 mins, then cut into bars & Enjoy
