Energy Bars
Ingredients:
- Instant oats – ½ cup (lightly roasted)
- Cashews – ¼ cup
- Almonds – ¼ cup
- Walnuts – ¼ cup
- Pistachios – 2 tbsp
- Sunflower seeds – 2 tbsp
- Pumpkin seeds – 2 tbsp
- Melon seeds – 2 tbsp
- Dates – 50 g (deseeded)
- Figs – 4–5
- Desiccated coconut – ¾ cup
- Dark chocolate (optional) – melted for topping
Method:
- Roast oats & all nuts/seeds till fragrant.
- Blend roasted mix with dates, figs & coconut till sticky.
- Press into a mould, top with melted chocolate (optional).
- Set in fridge 10–15 mins, then cut into bars & Enjoy
