Samosa Recipe:
Ingredients For Dough
- 1 cup wheat flour
- ¼ cup rava (semolina)
- ½ tsp ajwain
- 1 tbsp sesame seeds
- Salt to taste
- 2 tbsp ghee or oil
- Water (as needed)
For Filling
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp fennel (saunf)
- 1 small piece ginger
- 2 green chilies
- 3 boiled potatoes (mashed)
- 2 tbsp boiled peas
- ½ tsp amchur
- ½ tsp garam masala
- 1 tsp kasuri methi
- Salt to taste
- few small paneer cubes
- 1 tbsp ghee
Method
- Mix all dough ingredients, add water, knead a semi-soft dough & rest 20 mins.
- On a silbatta, crush cumin, coriander & saunf. Add ginger & chili — grind to paste.
- Heat ghee, sauté crushed masala, then ginger-chili paste.
- Add mashed potatoes, peas, amchur, garam masala, kasuri methi & salt. Cook 2 mins & cool.
- Divide dough into balls. Fill each with aloo filling + 1 paneer cube. Seal well.
- Cook in air fryer or appe pan (round in shape) on low flame till golden & crispy (10 mins).
