Lauki Soup
Ingredients:
- 1 cup lauki (bottle gourd), chopped
- 1 medium tomato, chopped
- 1 tsp methi seeds (soaked overnight)
- 1 small onion
- 1 tsp olive oil
- 3 cups water
- Black pepper to taste
- Salt to taste
Method:
- Heat olive oil and lightly sauté onion.
- Add tomato and cook till soft.
- Add lauki, soaked methi seeds & water.
- Simmer till lauki is completely soft.
- Blend lightly (keep it slightly coarse).
- Finish with freshly crushed black pepper.
