Paneer Tacos

Ingredients

For Paneer Tikka:

  • 1 cup paneer (cubed)
  • 1 cup mixed bell peppers (red, yellow, green – cubed)
  • 1 onion (cubed)
  • 1 tomato (cubed)
  • ½ cup thick curd (dahi)
  • 2 tbsp besan (gram flour)
  • 2 tbsp hot oil

Spice Mix:

  • 1 tsp garam masala
  • ½ tsp amchur (dry mango powder)
  • 1 tsp chaat masala
  • 1 tsp kasoori methi (crushed)
  • ½ tsp red chili powder
  • ¼ tsp turmeric (haldi)
  • Salt to taste

For Salsa:

  • 1 small tomato (finely chopped)
  • 1 small onion (finely chopped)
  • 2 tbsp boiled corn
  • A handful of fresh coriander (finely chopped)
  • ½ tsp oregano
  • Juice of ½ lemon
  • Salt to taste

For Assembly:

  • 4 small whole wheat rotis or tortillas
  • ½ cup grated cheese (mozzarella or cheddar)
  • Ghee or butter for roasting

Method – Step by Step

  1. Prepare the marinade: In a bowl, mix curd, besan, hot oil, and all the dry spices to form a thick paste.
  2. Add paneer and veggies: Add cubed paneer, bell peppers, onion, and tomato. Mix gently to coat well.
  3. Marinate: Let it rest for 10–15 minutes for better flavour absorption.
  4. Cook the filling: Heat a non-stick pan, add a little oil, and cook the marinated mixture for 8–10 minutes on medium flame until golden and slightly crispy.
  5. Make the salsa: In another bowl, mix chopped tomato, onion, corn, coriander, oregano, lemon juice, and salt. Keep it aside.
  6. Assemble tacos: Take a roti or tortilla, place the paneer tikka filling in the center, top with 1–2 spoonfuls of salsa, and sprinkle grated cheese.
  7. Fold and roast: Fold the roti like a taco. Heat a pan with some ghee or butter and roast the taco on both sides till golden and crispy.
  8. Serve hot: Enjoy your desi-style paneer tacos warm, with extra salsa or mint chutney on the side if you like!
