Spinach soup

Ingredients:

  • 1 cup spinach (washed)
  • 1 medium tomato
  • 1 drumstick (peeled & cut)
  • 2 garlic cloves
  • 4–5 soaked almonds
  • 1 small cinnamon stick
  • Black pepper to taste
  • ½ tsp roasted cumin powder
  • 1 tsp butter
  • 3 cups water
  • Salt to taste

 

Method:

  1. Add peeled drumstick, garlic, almonds, spinach & tomato to water. Boil till drumstick is soft.
  2. Remove spinach and immediately put it in ice water (to preserve nutrients & colour).
  3. To the remaining boiled broth, add cinnamon stick and give it one more boil.
  4. Peel the tomato. Blend garlic, tomato, spinach, almonds into a smooth puree.
  5. Add this puree back into the broth. Add salt, black pepper & roasted cumin powder.
  6. Give 1–2 final boils and serve warm.
