Recipe of mango bean salad
Ingredients:
- cup canned black beans (or boiled rajma), drained & rinsed
- ½ fresh mango, chopped
- ¼ cup red bell pepper, chopped
- ½ cup boiled corn
- ½ onion, chopped
- 1 tbsp spring onion, chopped
- Handful of fresh coriander, chopped
- ½ tsp red chilli powder
- 1 tbsp lime juice
- Salt & black pepper to taste
Method:
- In a bowl, combine beans, mango, corn, onion, bell pepper, spring onion, and coriander
- Add chili powder, salt, pepper, and lime juice
- Toss everything gently and serve chilled!
