High Protein Pav Bhaji

High Protein Pav Bhaji recipe –

Ingredients:

  • 8-10 garlic cloves
  • 2 green chillies
  • 1 cup roughly chopped tomatoes
  • 1 tsp cumin seeds
  • 1 cup sliced onion
  • 1 cup cauliflower florets
  • 3/4 cup capsicum, chopped
  • 1/2 cup beetroot, grated or chopped
  • 2-3 medium potatoes, peeled & diced
  • 3/4 cup carrot
  • 1/2 cup french beans
  • 1/2 cup green peas
  • 3/4 cup soya granules (high protein twist!)
  • 1 tbsp grated ginger
  • Salt to taste
  • 1/2 tsp turmeric powder
  • 1.5 tsp coriander powder
  • 2 tsp Kashmiri red chilli powder
  • 1 tbsp pav bhaji masala
  • Chopped green coriander (for garnish)
  • 2 cups water

Method (Simple & Quick):

  1. Soak soya granules in hot water for 10 minutes, squeeze and keep aside.
  2. In a pan, sauté cumin seeds, garlic, ginger, and green chillies.
  3. Add onions and cook till golden. Then add tomatoes and cook till soft.
  4. Add all chopped veggies, salt, turmeric, coriander powder, red chilli powder, pav bhaji masala, and water.
  5. Cover and cook till veggies turn soft.
  6. Mash everything well with a pav bhaji masher.
  7. Add soaked soya granules and mix everything. Simmer for 5-7 mins.
  8. Garnish with coriander and serve hot with toasted whole wheat pav!
