High Protein Pav Bhaji recipe –
Ingredients:
- 8-10 garlic cloves
- 2 green chillies
- 1 cup roughly chopped tomatoes
- 1 tsp cumin seeds
- 1 cup sliced onion
- 1 cup cauliflower florets
- 3/4 cup capsicum, chopped
- 1/2 cup beetroot, grated or chopped
- 2-3 medium potatoes, peeled & diced
- 3/4 cup carrot
- 1/2 cup french beans
- 1/2 cup green peas
- 3/4 cup soya granules (high protein twist!)
- 1 tbsp grated ginger
- Salt to taste
- 1/2 tsp turmeric powder
- 1.5 tsp coriander powder
- 2 tsp Kashmiri red chilli powder
- 1 tbsp pav bhaji masala
- Chopped green coriander (for garnish)
- 2 cups water
Method (Simple & Quick):
- Soak soya granules in hot water for 10 minutes, squeeze and keep aside.
- In a pan, sauté cumin seeds, garlic, ginger, and green chillies.
- Add onions and cook till golden. Then add tomatoes and cook till soft.
- Add all chopped veggies, salt, turmeric, coriander powder, red chilli powder, pav bhaji masala, and water.
- Cover and cook till veggies turn soft.
- Mash everything well with a pav bhaji masher.
- Add soaked soya granules and mix everything. Simmer for 5-7 mins.
- Garnish with coriander and serve hot with toasted whole wheat pav!
