Paneer Tacos
Ingredients
For Paneer Tikka:
- 1 cup paneer (cubed)
- 1 cup mixed bell peppers (red, yellow, green – cubed)
- 1 onion (cubed)
- 1 tomato (cubed)
- ½ cup thick curd (dahi)
- 2 tbsp besan (gram flour)
- 2 tbsp hot oil
Spice Mix:
- 1 tsp garam masala
- ½ tsp amchur (dry mango powder)
- 1 tsp chaat masala
- 1 tsp kasoori methi (crushed)
- ½ tsp red chili powder
- ¼ tsp turmeric (haldi)
- Salt to taste
For Salsa:
- 1 small tomato (finely chopped)
- 1 small onion (finely chopped)
- 2 tbsp boiled corn
- A handful of fresh coriander (finely chopped)
- ½ tsp oregano
- Juice of ½ lemon
- Salt to taste
For Assembly:
- 4 small whole wheat rotis or tortillas
- ½ cup grated cheese (mozzarella or cheddar)
- Ghee or butter for roasting
Method – Step by Step
- Prepare the marinade: In a bowl, mix curd, besan, hot oil, and all the dry spices to form a thick paste.
- Add paneer and veggies: Add cubed paneer, bell peppers, onion, and tomato. Mix gently to coat well.
- Marinate: Let it rest for 10–15 minutes for better flavour absorption.
- Cook the filling: Heat a non-stick pan, add a little oil, and cook the marinated mixture for 8–10 minutes on medium flame until golden and slightly crispy.
- Make the salsa: In another bowl, mix chopped tomato, onion, corn, coriander, oregano, lemon juice, and salt. Keep it aside.
- Assemble tacos: Take a roti or tortilla, place the paneer tikka filling in the center, top with 1–2 spoonfuls of salsa, and sprinkle grated cheese.
- Fold and roast: Fold the roti like a taco. Heat a pan with some ghee or butter and roast the taco on both sides till golden and crispy.
- Serve hot: Enjoy your desi-style paneer tacos warm, with extra salsa or mint chutney on the side if you like!
