Matcha Chia Pudding Recipe
Ingredients
- 1/3 cup hot water
- 2 tsp matcha powder
- 1/2 cup chia seeds
- 1 cup almond milk
- 1/2 cup Greek yogurt
- 2 tsp honey (or maple syrup)
- 1 tsp vanilla extract
Method
- Prepare Matcha: In a small bowl, whisk matcha powder with hot water until smooth and lump-free.
- Mix Pudding Base: In a mixing bowl, combine chia seeds, almond milk, honey, vanilla, and the prepared matcha mixture. Stir well.
- Soak: Let the mixture sit for 30 minutes or refrigerate overnight until thickened. If it becomes too thick, add a splash of almond milk and stir.
- Assemble: Divide pudding into 2 serving cups. Top each with Greek yogurt and a light dusting of matcha powder.
- Serve: Enjoy chilled for a refreshing and healthy dessert or breakfast.
