Matcha Chia Pudding Recipe

Ingredients

  • 1/3 cup hot water
  • 2 tsp matcha powder
  • 1/2 cup chia seeds
  • 1 cup almond milk
  • 1/2 cup Greek yogurt
  • 2 tsp honey (or maple syrup)
  • 1 tsp vanilla extract

Method

  1. Prepare Matcha: In a small bowl, whisk matcha powder with hot water until smooth and lump-free.
  2. Mix Pudding Base: In a mixing bowl, combine chia seeds, almond milk, honey, vanilla, and the prepared matcha mixture. Stir well.
  3. Soak: Let the mixture sit for 30 minutes or refrigerate overnight until thickened. If it becomes too thick, add a splash of almond milk and stir.
  4. Assemble: Divide pudding into 2 serving cups. Top each with Greek yogurt and a light dusting of matcha powder.
  5. Serve: Enjoy chilled for a refreshing and healthy dessert or breakfast.
