Broccoli soup

 

Ingredients:

  • 1 tsp olive oil
  • 2½–3 cups broccoli florets (or 1 medium broccoli)
  • 14–16 soaked almonds
  • 1 small onion, chopped
  • 4–5 garlic cloves
  • 2 cups water or vegetable stock (adjust as needed)
  • ⅓ cup milk (optional, for extra thickness)
  • Salt to taste
  • Black pepper to taste

 

Method:

  1. Heat olive oil/Butter and lightly sauté onion & garlic.
  2. Add broccoli florets, soaked almonds, water or veg stock and seasonings.
  3. Simmer till broccoli is soft but still bright green.
  4. Blend into a smooth soup.
  5. Add milk (optional), salt & black pepper.
  6. Give one final boil.

 

Optional Topping (for crunch):

  • Lightly sauté a few raw broccoli florets in a pan, season lightly and use as a crunchy topping before serving.
