Breakfast Cookie

 

Ingredients:

  • 1 ripe banana
  • 2 tbsp peanut butter
  • 1 tbsp honey
  • ½ cup rolled oats
  • ¼ cup mixed nuts (chopped)
  • ¼ cup mixed seeds (flax, sunflower, pumpkin)
  • Dark chocolate chips (optional)

How to make:

  1. Mash the banana.
  2. Mix everything until well combined.
  3. Shape into small cookies on a baking tray.
  4. Bake at 170°C for 15–20 minutes.

 

Cool slightly — they firm up as they rest.

Store in an airtight container for 3–4 days (or refrigerate for longer).
