Breakfast Cookie
Ingredients:
- 1 ripe banana
- 2 tbsp peanut butter
- 1 tbsp honey
- ½ cup rolled oats
- ¼ cup mixed nuts (chopped)
- ¼ cup mixed seeds (flax, sunflower, pumpkin)
- Dark chocolate chips (optional)
How to make:
- Mash the banana.
- Mix everything until well combined.
- Shape into small cookies on a baking tray.
- Bake at 170°C for 15–20 minutes.
Cool slightly — they firm up as they rest.
Store in an airtight container for 3–4 days (or refrigerate for longer).
