Moong dal cucumber salad

Ingredients:

  • 2 cup diced cucumber
  • 1/2 cup yellow moong dal
  • 1/3 cup roasted peanuts, crushed
  • 1/3 cup grated coconut
  • 1 green chilli chopped
  • 1 tbsp coriander (fresh)
  • 2 tbsp pomegranates
  • 1 tbsp cumin powder
  • 1 tbsp black pepper powder
  • Salt as per taste
  • 2 tbsp lemon juice

 FOR TEMPERING:

  • 30ml seasame oil
  • 1 tbsp mustard seeds
  • 1 tbsp curry leaves

Method:

  • Soak 1/2 cup Moong dal overnight and boil them with little salt.
  • Add all the ingredients and mix them well in a bowl.
  • For tempering, in a pan add oil and further add mustard seeds and curry leaves.
  • Roast them for 1-2 min, and add it to mixture bowl.
